Bakery in France


Induct invents and creates secure solutions for industry on every continent, all over the world. For example, we are currently working on a project for one of the largest bakeries in France. This bakery is specialized in producing fresh bread and rolls that can be baked later. The pre-baked bread is made in an ultra-modern bakery. Induct ensures that this bakery meets all new requirements in the field of hygiene, traceability and food safety.

Induct takes care, protects and monitors the climate and air quality around the bread from the moment they come out of the oven until they are packed. We do this, among other things, by dissipating the heat through a cooling system and at the same time using a shell of sterile air to maintain the unpackaged sandwiches. This makes them inaccessible for fungi and bacteria from outside.

We make the sterile cooled air in 2 large air handling units. For this we have built a steel construction with operating platform on which these air plants with filter system and cooling are set up. For the control, we installed a system that is linked to the production process, so that the right cooling process can be offered for each product.

To make the sterile air, we installed a VIROBUSTER system in the air handling unit. This is a system that cuts the DNA by means of UV-C light that shines on micro-organisms such as bacteria, viruses and fungi. As a result, they can no longer multiply and die. Because it only happens by direct exposure to the organisms, it is harmless to the product and to humans.

We are currently installing ductwork, piping and electricity. We expect to finish our work in this bakery at the end of June. The photos of the steel construction and the air handling units can be seen below.
